I used to frequent the cutest little coffee shop. The owners were the sweetest couple, and they always made sure that they sent me home with a delicious homecooked meal or treat.
After searching for years to recreate that potato salad, I created my own recipe - combining my favorite flavors from that original potato salad, my own southern cooking style, and of course a little hemp seasoning!

12 yukon gold potatoes (halved)
¼ cup cannabis olive olive
¼ cup lemon juice
½ cup parsley (minced)
½ cup scallions (minced)
¼ cup fresh mint (minced)
2 teaspoons Culinary Cannabis All Purpose Hemp Seasoning
Place halved potatoes in a large pot and cover with cold water. Bring to a boil and cook until fork tender; strain and let cool slightly.
Toss cooked potatoes in a large bowl with all remaining ingredients.
Check for seasoning, adjust and serve. Serve warm, room temperature or chilled.
