Cucumber Tomato Hemp Salad Recipe

We are creatures of habit and even in food those seasonal habits often come from childhood food memories. For me, I couldn't walk into Grandma's house without walking past the kitchen table. And in the summer there was also a dish of tomatoes, cucumbers and onions in vinegar sitting in a glass bowl in the middle of the dining room table.

This is our 420 friendly version - adding a healthy hemp element to what's so familiar to many of us anyway. For us Florida people, tomatoes are available all the time but especially in the spring - and cucumbers are coming in now too, so why not take advantage of the local farmers markets. Try this recipe to make something fresh and healthy, good for you, good for your neighbors, and good for the earth!

  • 1/4 cup infused olive oil

  • 2 tablespoons white wine vinegar

  • 1 tablespoon sugar

  • 2 teaspoons Culinary Cannabis All Purpose Hemp No Salt Seasoning

  • 1 tablespoon Hemp Seeds

  • 3 cups diced seeded cucumbers

  • 3 cups diced seeded tomatoes

  • 1/2 cup thinly sliced red onion

  • 1/4 cup crumbled feta cheese

  1. Mix oil, vinegar, sugar, Seasoning and salt in large bowl with wire whisk until well blended. Add cucumbers, tomatoes and onion; toss to coat well. Cover.

  2. Refrigerate at least 1 hour to blend flavors. Just before serving, sprinkle with feta cheese.

I LOVE this recipe because we can switch up the veggies or use another kind of cheese and change the salad completely. Add Bacon, olives, garbanzo beans to switch it up.
